INGREDIENTS
A cross between kalya and a Karaai2 onions sliced1 chicken or approx 12 pieces of your choice of portions Quarter to half cup ghee (Clarified butter)
Whole spices..1 large cinnamon stick 2 cloves3 elachie2 pepper cornsQuarter teaspoon whole jeeraa(cumin)1 sprig curry leaves1 dry whole red chilli 2 whole cloves garlic
METHOD
Sautè the onion till a lovely golden colour with the whole spices,dry chilli and garlic..add in the curry leavesAdd in 2 teaspoon ginger garlic paste 1 tablespoon chilli garlic paste Braise for a minute Add in the Chicken ..toss wellAdd spicesA pinch of saffron 2 teaspoon crushed red chillies Half teaspoon chilli powder 1 heaped teaspoon tumeric1 level teaspoon dhana,jeeraa powder Quarter teaspoon pepper Mix well and braise few minutes Add quarter cup of boiling water and allow to cook gently till ghee (Clarified butter) comes up
2 tomatoes Steeped in boiling water and microwaved for 2 minutes..poke a hole in the tomato firstRemove the peelBlend with a handblender and add into the chicken mixture.Allow to cook with the tomatoes untill the tomato water burns out.Add in half cup inkomaze /sour milkQuarter cup plain yoghurt1 tablespoon lemon juiceSimmer for 10 minutes Lastly add in 2 to 3 slit green chillies(l removed the seeds)Freshly chopped dhania (coriander)And a sprinkle of garum masala.Serve with roti,naan or puri
