INGREDIENTS
2 tablespoon oil1kg chicken fillet (cut into 1 inch cubes)1 onion (sliced)1 cinnamon stick2 tablespoon ground garlic1 tablespoon ground ginger1 teaspoon ground green chillies (optional) 1 teaspoon salt½ teaspoon turmeric powder2 teaspoon dhana jeeroo powder1 teaspoon mild kashmiri chilli powder1 teaspoon cayenne pepper1 teaspoon garam masala powder1 tablespoon lemon juice2x 50g sachet tomato paste1 cup fresh cream/ plain yoghurt½ cup milk + 2 tablespoon flourPinch egg food coloring powderFew leaves mint (chopped)Few leaves coriander (chopped & some for garnish)Rice or naan (for serving)
METHOD
1. In a large skillet over medium heat, heat oil with cinnamon stick and add onions and saute till lightly golden. 2. Add ginger, garlic & spices and braise till fragrant.3. Add chicken and mix. Cook till half done.4. Add tomato paste, lemon juice, cream and milk and mix in well.5. Allow to come to a boil, then add in flour and mix in. 6. Cook till thickened and creamy, then add in food coloring and mix in.7. Add in chopped greens and mix in. 8. Remove from heat, serve with lemon wedges, basmati rice/ garlic naan.
INFO & TIPS
Tikka means strong/spicy. So the ginger, cayenne, chilli powder, garam (hot) masala all add heat to the dish. Adding the ground green chillies is completely optional based om how hot you would like the dish.
You may also substitute with healthier options, so almond or cashew milk, and a low/med fat yoghurt (plain or coconut flavored)
