INGREDIENTS
4 boneless, skinless chicken breasts (washed)1 tablespoon ginger garlic3 tablespoon basil pesto (homemade or store bought jar)85g mascarpone ( I used Labne - turkish product like a sour cream)4 tablespoon olive oil100g breadcrumbs, preferably from day-old bread (optional)
METHOD
1. Heat oven to 200 degrees celsius2. Make a few slits on the chicken fillet pieces and apply ginger garlic.3. Mix together the pesto and mascarpone, and marinade the chicken pieces in this.(4. If you are rolling in breadcrumbs then place each chicken piece on a plate and press all over with seasoned breadcrumbs.)5. Place the chicken in a lightly oiled shallow baking dish (Drizzle over the remaining oil on the breadcrumb ones so they don't dry out)6. Cook in the oven for 20-25 minutes until the chicken starts to turn golden and is cooked through.

Great recipe to use up half jar of basil pesto you may have in the fridge
You could also create a little "pocket" and stuff the chicken pieces with the pesto mixture.
