INGREDIENTS
1 red onion (sliced in rings)1 white onion (sliced in rings)4 baby marrows (sliced in rounds)1 yellow pepper (sliced in rings)Peppadews (chopped)Tomatoes (sliced thinly in rounds)Fresh rosemary Fresh thymeLemon (sliced)Indian Fish MasalaSaltBlack pepper1 whole yellow tail fish (white fish of choice, scaled and butterflied, I removed head but left tail on)
METHOD
1. Wash the fish, checking all scales are removed, running the back of a knife along the skin.2. Rub in salt and pepper to the tops and insides of fish.3. Massage in masala on the inside and outside of fish.4. Place some lemon slices inside fish.5. Place on veg, seasoning with salt and pepper. 6. Place on fresh herbs.7. Tie fish closed with string.8. Place lemon slices and fresh herbs ontop of fish.9. Wrap foil tightly around fish and place on braai (bbq) with hot coals or place in oven and cook, turning the fish over one or two times.10. The fish is done when it flakes. Do not overcook it or it will be dry and flesh taste powdery.

I served it with a lemon butter sauce.
