INGREDIENTS
3 tablespoon (45ml) olive oil
1 onion, chopped or 3 spring onions
500g spinach, rinsed and chopped
2 cloves garlic, chopped
250g Danish Feta
1 egg, beaten
salt and freshly ground black pepper, to taste
6 x large black mushrooms
METHOD
1 Preheat the oven to180°C. Heat 2 tablespoon (30ml) of
the oil in a mediumsize pot over medium heat and
sweat the chopped onion.
2 Add the spinach and garlic. Cook until the
spinach has wilted and most of the liquid has
evaporated. Remove from heat.
3 Crumble in the Feta and stir in the egg. Season
with salt and pepper.
4 Peel the mushrooms and place on a greased
baking
tray.
5 Place 3-4 tablespoon of the spinach mixture on each
mushroom and drizzle with the remaining oil. Bake
for 15-20 minutes.
INFO & TIPS
Divine with chicken or steaks. You can also top
with a bit of grated mozarella after baking n
grill till melted.
