INGREDIENTS
½ onion, finely chopped1 can baked beansEggs6 baby potatoes(cubed)Pinch or mustard seeds¼ cup oil1 teaspoon ground dhania (coriander)¼ teaspoon Jeeru (Cumin) powder1/4 teaspoon smoked paprika½ teaspoon tumeric1 teaspoon crushed garlicCurry leaves
METHOD
1 Heat oil, add in onions, curry leaves and mustard seeds2. When onions are soft add in garlic and spices. Mix, add in cubed potatoes and mix well making sure potatoes are wellcoated.3. Add ¼ cup water and cook till potatoes are soft. When potatoes are soft enough add 1 can of baked beans, mixwell and cook for 6-7 minutes. You may add in a little more water if it starts to stick. Make wells with a spoon, crack ineggs and cook with the lid on till eggs are done on low heat.
