250g butter1 tablespoon orange rind ¾ cup castor sugar2 eggs 1 cup chopped dates ½ cup fine coconut ½ cooked mashed pumpkin (cold) 2 cups self raising flour ½ cup milk
Cream butter and sugar, add eggs and beat. Add dates, coconut, rind and pumpkin and mix in. Add flour gradually with milk. Bake at 180C until golden (use a toothpick to check). Dust with icing sugar when cool.
