INGREDIENTS
250g Chicken fillet raw 2 spring onion Sticks2 Garlic Cloves Chopped1 teaspoon Chopped Ginger pieces
Place the above in a food processor and blitz till minced and fine. Remove into a bowl.
Then add:1 tablespoon soft ghee (Clarified butter)1 teaspoon Salt or to taste1 teaspoon Red Chilli Flakes½ teaspoon Paprika½ teaspoon Siracha Chilli Sauce or any peri peri sauce¼ teaspoon Sugar¼ teaspoon Bicarbonate Soda1 Egg Yolk, keep the whites aside¼ Cup of WaterMix well.
METHOD
Its important to add the sugar as the soda is a little bitter. The soda tenderizes the chicken too. So dont leave out this step.Once mixed. Place in the fridge for 30 minutes.Grease your hands with little ghee (Clarified butter).Take 1 tablespoon of the mixture, flatten the chicken mixture on your palms, place a cheese block (1cm thick ), (1.5cm × 1.5cm)in size.Close and roll into a ball.Dip each ball in the egg white mixture (1 egg whites + 1 tablespoon milk mixed together), then dip into breadcrumbs.These are now freezable.Deep fry into medium hot oil. Do not over crowd the oil.Once you see the cheese starting to ooz out, they r ready.This is a sign that the heat has gone through the chicken ball.If freezing, defrost fully before frying.Enjoy..*These are best eaten straight away. Any fried items do loose their crispyness after some time.
