6 chicken fillets cut into large cubes¼ cup Double cream yogurt3 tablespoons olive oil2 tablespoons tomato paste1 teaspoon garlic paste1 teaspoon @sujees_gourmet_foods peri peri masala2 tablespoons lemon juice1 tablespoon fine red chilli powder¾ teaspoons dried thyme½ teaspoon ground cumin¼ teaspoon mixed spice1 teaspoon salt½ teaspoon ground pepper, or to tasteBamboo skewers, soaked in water for at least 30 minutes In a small bowl, mix all ingredients. Coat the chicken with the marinade and cover bowl. Allow to marinate for about 20-30 minutes. Thread chicken on skewers and grill. Grill the chicken until you see visible char marks and the chicken is cooked through. I used a griddle. Basted with a zaatar flavored lemon butter sauce. Served on a bed of lettuce and @bibis_bakes pitas with a side of tzatziki and salad.
