Mother's Banana Breakfast Muffins

INGREDIENTS

2  Eggs, beaten2x teaspoon Sugar1 teaspoon Vanilla Essence or Banana essencePinch salt¼ Cup oil1x Banana, (mashed) or ¼ Cup Sultanas or Peacan Nuts (chopped).... Optional 400g All Bran Mix 1 teaspoon Baking powder1 Cup Milk

METHOD

Cream the eggs, sugar, oil, until smooth.. Add the rest of the dry ingredients, then add in the mashed banana... Mix well. Add the batter too the muffin cups, half full & bake for 15-20 minutes @170 degrees.
Makes 18-20

INFO & TIPS

Also add 1/4 Cup unpitted dates(chopped)....
