RECIPE

4 eggs 1 cup brown sugarBeat till light & fluffyAdd in 1 & ¼ cup oil & beat again.Sift 2 cups flour, 2 teaspoon baking powder & 2 teaspoon cinnamon. Add to egg mixture, then add 1 cup diced pecans & 2-3 cups finely grated carrots.Beat till mixed. Spoon into muffin pans or loaf pan. I made 2 mini muffin pans & 1 loaf. Bake @ 180°.
Cream cheese icing125g butter½ tub cream cheeseIcing sugar
Beat butter till light. Add cream cheese & icing sugar. Pipe onto cupcakes. Decor as desired.
