INGREDIENTS
250g butter½ cup castar sugar2 tblpsns cold water2 ½ cups self raising flourRafaello’s (whole or cut in half - I cut them in half)white melting chocolate (optional)dessicated coconutsmall paper cases
METHOD
1)beat butter,sugar and water till white and fluffy.2)add the flour and mix to form a soft dough.3)flatten a piece of dough on the palm of your hand - place a rafaello in the middle and enclose it in the dough ... Roll into a ball and place on a greased baking tray. Repeat with the rest of the dough and rafaello.4)bake in a preheated (180degrees) oven till the bottom of the biscuit is golden brown. Remove from oven and leave to cool.5)once biscuits are still warm roll them in coconut and place them in paper cases or wait for them to get cold if you’re dipping in chocolate/rolling in coconut.
INFO & TIPS
Cocoa powder can be added to this recipe - Rafaello can be substituted with Ferrero, coconut can be substituted with crushed nuts and white melting chocolate can be substituted with milk chocolate for ‘Ferrero Biscuits’
