250g butter 1 cup castor sugar 2 eggs 200g coconut 1 teaspoon baking powder ¼ teaspoon bicarbonate of soda 1 teaspoon vanilla essence ¼ cup oil 1 cup pecan nuts (chopped fine) +-3 cups flour Make into a soft dough. Roll about 1cm thick and fluff up with a fork and cut with any shape as desired. Sprinkle with hundreds and thousands or a cherry in the center. Bake at 180 till golden. As you can see I like mine nice and golden.
