Donut:1 ¾ cup cake flour3 tablespoons sugar¼ teaspoon nutmeg½ teaspoon salt½ cup lukewarm milk1 egg45g (just over 3 tablespoons) melted butter7g instant yeast1 teaspoon vanilla essence Glaze:75g butter2 cups icing sugar1 teaspoon vanilla essence7 to 15 tablespoons milk (thin glaze is best)
1. Sift all the dry ingredients in a bowl.2. In a separate bowl mix milk, melted butter, egg, yeast and vanilla. 3. Instant yeast does not need to proof so once number 2 is all mixed then you can add it to the dry ingredients .4. Knead dough on a greased surface for 10min. The dough is very sticky so dont be alarmed.5. Place dough in a greased bowl, cover bowl and allow to rise for 1½ hours to 2 hours.6. Roll dough out and cut donut shapes and place them on baking paper and allow to rise for 30min.7. Cut the baking paper around donuts and drop each donut from the paper into medium heat oil. Cutting around the donut and using the paper to lift donut into the oil helps to keep the donut shape. I use a skewer to manage in oil.8. Dip in glaze while donuts are warm and allow them to drip dry on a cooling rack.
