Inspired & Adapted
125g Soft Butter¾ cup normal sugar2 tablespoon Oil2 eggs 1 teaspoon Vanilla essence and little Almond Essence (OR SEE NOTE BELOW) 2 cups Dessicated Coconut I Added a Handful of Crushed Pecan nuts (or crushed Almonds) its Optional+- ¼ cup Cocoa Powder (Depending on how deep brown you prefer) 2 cups flour2 teaspoon Baking powder(GRATED CHOCOLATE FOR LATER (OR IF MINT CHOCOLATE THEN ADD LITTLE MINT ESSENCE ALSO) METHODBeat Butter and Sugar till pale, light, Fluffy and creamyAdd eggs (one at a time) Beat wellAdd essencesNow add the Dessicated Coconut and Crushed Pecans Or Almonds Mix wellAdd the Baking Powder and Cocoa powderMix well again and now gradually add in the Flour (if texture feels dry add little Oil again) Mix well to make a soft doughPat or Roll out the Dough on a Flat surfaceScrape with Fork to give it a Rough LookCut in Small Rounds Place on a Greased tray spread them apartBake in Oven at 170* (Total Time 15-20 minutes see Note Below) Pull Tray Out about 10 minutes LATER and PUT Grated chocolate on each Round(If using Mint Chocolate then add Mint essence in the dough also) THENPUT the Tray Back In the Oven and ContinueBaking for another 5 - 8 minutes OR Until DoneDecorate When CoolOPTIONAL Once Cooled Pipe Melted Chocolate over and Sprinkle Dust Enjoy..
