INGREDIENTS
500g double cream/ Greek plain yoghurt1 teaspoon vanilla essence2 tablespoon honey +more125g punnet blackberries (or blueberries, cut in halves)2 oranges (peeled, segmented)Loaf madiera cake
Garnish (optional)-Whipped creamStore bought meringues1 tablespoon shredded coconut1 tablespoon almond flakesOrange rindIcing sugar
METHOD
1. Cut madiera into thin slices.2. Mix yoghurt with vanilla and honey.3. Mix the berries and orange pieces with a drizzle of honey.4. Layer the sponge in a serving dish or individual glasses/bowls.5. Place down some orange and berries.6. Spoon over yoghurt. 7. Repeat another layer. 8. Top with yoghurt. 9. Lightly dry toast almond flakes and then coconut, sprinkle over the top. And garnish with orange rind.OR top with whipped cream, garnish with almonds, coconut, rind and dusting of icing sugar and place on meringue.10. Chill in fridge for a little while and serve cold.
INFO & TIPS
Note: For a healthier version, replace cake with 1/2 cup soaked chia seeds, 1/4 cup rolled oats (granola), leave off the extra whipped cream and meringues and use a lower fat content yoghurt.
