1kg chicken thighs and drumsticks pieces (with skin on)1 extra large egg (beaten)1 cup buttermilk Coating-1 cup self-raising flour1 sachet Zinger spice2 teaspoon Roberson's garlic salt1 teaspoon dried thyme 1 teaspoon dried oregano1 teaspoon dried basil1 teaspoon ground black pepper1 teaspoon ginger powder1 teaspoon onion powder1 teaspoon mustard powder½ teaspoon white pepper2 teaspoon paprika powder
1. Wash and dry chicken pieces.2. Mix egg and buttermilk and submerge chicken into it.3. Leave at room temperature for 30min.4. Heat oil in a deep frying pan on medium heat.5. Mix coating ingredients in a dish.6. Roll chicken in the spiced flour.7. Dip back into milk and back into flour.8. Place in hot oil carefully and fry till golden on both sides.9. Make sure to cook chicken till done. Test by skewering with a knife. Chicken must be firm at the bone.10. Drain on kitchen paper and sprinkle with little salt.

Note: If you do not have the spice, add another cup of flour, and 2 more Tbsp of paprika powder and 1 tsp cayenne powder.
