INGREDIENTS
⅓ cup oil (@bwellfoods Canola oil) 3 tablespoon tangy Mayo (@bwellfoods mayo){P. S bwellfood mayo is eggless 😍) ¾ cup Almond Milk (or dairy milk) 1 ½ cups brown sugar 2 ½ cups flour 3 teaspoon baking powder 1 teaspoon vanilla essence 1 ½ apples (2 medium apples) (peeled and diced into small pieces) 2 teaspoon cinnamon powder1 tablespoon coconut oil Coconut flakes (or dessicated for a softer crumble)
METHOD
Preheat oven to 190C.In a large bowl, mix brown sugar, oil, mayo, vanilla essence and milk until smooth. In another bowl, mix flour, 1 teaspoon of cinnamon, and baking powder together. Mix together wet and dry ingredients. Fold in chopped apples. Pour batter into a large greased pan, or into cupcake trays. Combine the rest of the cinnamon (1tsp) with the coconut oil (melted) and coconut flakes and sprinkle it evenly over the batter before baking. This creates a crunchy crumble. P.S I used about 4 tablespoon coconut oil and 1 large handful of flakes. You could even add brown sugar to this for added decadence. You may used dessicated coconut for a softer crunch.Bake at 180C for 45min or until done. Check at 35min.🌸Serve at room temperature or warm (with ice cream and a cup of hot Chai 🍵) Enjoy 🌸
