VEGETABLES TO BE PREPARED :•1 onion :thinly sliced.•1 carrot : grated.•½ green and ½ red pepper thinly •sliced.•2 Teaspoons green masala ( Garlic & •green chilly pounded). SPICES:•2 Tablespoons Robertson’s Exotic Thai •Spice.•1 Teaspoon lemon pepper.•1 Teaspoon salt ( to your taste). •1 Teaspoon lemon pepper. STOCK:•1 Packet Knorr thick veg soup. •1 Packet Knorr white onion soup.Mix the above in some 1 mug of cold water to dissolve. LIQUIDS:•1 tin Coconut cream. •1 Cup fresh milk ( 250ml).• 250ml Fresh cream.• 4 cups water ( 1 litre). FATS:•2 Tablespoons ghee (Clarified butter) and 1 Tablespoon oil. MEAT:•125g Chicken fillet cubed.
•On medium heat add the ghee (Clarified butter) / oil in a large pot. •Sauté onions ( fry until just before it turns golden brown).•Add the chicken and fry for a minute. •Add the veg and the spices, now close the lid and leave on for 5 minutes; tho brings out the water from the chicken and allows the spices to infuse into the meat. •Add the dissolved soup mix and the 4 cups of water. This is a good time to tase for salt and chilly as the soups also have salt in. Add more if necessary. •Close the lid and boil for 7 minutes. You should have a good sense of warmth and comfort when you open that boiling pot of soup.•Lastly lower the heat and add the fresh milk ,cream and coconut cream.•This should be left to simmer for another 5 minutes then your soup is ready to be dressed and served.
