INGREDIENTS
250g butter softened1 ¾ cup brown sugar1 egg11 teaspoon ginger powder 3 tablespoon golden syrup 3 teaspoon bicarb of soda 2 ½ cup self raising flour Pinch of salt
METHOD
Cream butter and sugar until light and fluffy. Add egg beat well, then add the ginger powder, golden syrup, bicarb and salt beat until well combined. Lastly add in the flour mix into a soft dough. Cover in plastic wrap and refrigerate dough for 30 minutes. Make balls in the palm of your hand. Bake on 165 degrees Celsius for 10 minutes or until golden and done. Remove from oven allow to cool on wire rack. The outside with be crisp with a soft chewy center
INFO & TIPS
If you don't want too much of the ginger flavor cut down ginger powder to 5 tsp if you only want a hint of ginger add 2 tsp ginger powder
