INGREDIENTS
250g Fattis & Monis farfalle (bow) pastaOlive oil¼ cup reserved pasta water¼ cup frozen peas (thawed)1 cup edamame beans½ cup broad beansSalt and black pepper (to taste)Butter1 small onion (sliced)1 tablespoon ground garlic pasteJuice of 1 lemon1 tub Lancewood mascarpone cheeseDried mixed herbs2x tins Woolworths shredded tuna in brineCyprus parmesan cheese (optional)
METHOD
1. Give broad beans a quick boil till tender.2. In a microwave boil and a blob of butter with salt, pepper, broad beans, edamame & peas.3. Cook till tender. 4. In a deep pot, add water, a good drizzle of olive oil and good pinch salt.5. Bring water to the boil on med-high heat and add pasta.6. Boil till al-dente, removing from water and reserving ¼ cup pasta water.7. In a large skillet, add a drizzle of olive oil, and onion.8. Cook till translucent, then add garlic and sautè for a minute.9. Add in mascarpone cheese, reserved pasta water and lemon juice.10. Whisk into a sauce, cook for 2min.11. Add in cooked pasta, beans and peas. Remove from heat.12. Drain the tuna and add to pasta. 13. Mix altogether and check seasoning.14. Garnish with mixed dried herbs & serve.

Note: Any cut of pasta can be used to make this dish.
