INGREDIENTS
Meatballs
300-500 g mince (depends how many you want) _Spice_: 2 teaspoons Italian herbs 1 teaspoon mixed herbs 1 teaspoon salt 1 teaspoon crushed black pepper 1 teaspoon crushed chilli 1 teaspoon Portuguese spice 1 -2 teaspoons of your preferred meat spice (I used six gun cause I think it slaps with beef but you can use steak and chops or any other)
Fry 2 tablespoons butter 1 onion (chopped) 2 teaspoons coriander seeds (the round ones) 1 - 2 teaspoons cumin seeds
_Add_ 1 large egg ½ cup grated cheese (I used a mix of cheddar and Parmesan) ½ cup bread crumbs 2 tablespoons of fresh herb - you can use basil, parsley or coriander to- I used coriander (finely chopped) ½ cup milk (or water)
METHOD
_Preheat the oven to 210 degrees Celsius _Spray a baking pan with cook & bake spray (line with parchment paper if you like)
Combine the meat and spice with the fried onion spice mix and egg cheese mix. Mix well with your hands (don’t overmix or they’ll be tough but just mix till combined)
Use a spoonful of meat to roll into the balls and lay them on the baking tray. Once they’re all laid out, spray lightly over them with cook and baking spray.
Put them into the oven for 10 minutes (to bake) Then turn the oven on to grill for another 10- 15 minutes. Grill till brown.
(You can turn them at the 10 minute interval as well.)
