My own adaptions of various recipes to make a simplified version of another childhood favourite.
Say BISMILLAH when beginning- Allah will fill the food with barakah & noor.
1 roll of Puff Pastry thawed overnight in the fridge. Custard Filling200ml milk2 egg yolks1 tablespoon custard powder (cornstarch can be substituted)3 tablespoons of sugarCapful of orange or lemon essenceCinnamon powder to dust Meringue Frosting2 eggs whites½ cup sugar
1. Filling: ▪ Mix custard powder into milk stirring well until dissolved.▪ Add sugar, egg yolks & essence mix until yolks are well incorporated into the milk.▪ Place mixture in a heavy based pot and cook until mixture thickens.●Set aside to cool. 2. Frosting Beat egg whites until frothy then gradually add in sugar beating until a smooth, glossy and stiff meringue type of mixture. 3. Assembly ▪ Remove puff pastry from fridge and roll out onto a well floured movable surface. ▪Roll into a rectangular shape.▪Spread custard filling on bottom half don't worry if it appears to be alot or to thick that's exactly what we want▪ Dust cinnamon generously over custard filling.▪ Fold closing up the filling.▪ Spread all the frosting on top.▪ Place in fridge for 1 hour makes it easier to cut and bake the egg whites.▪Remove from fridge cut across in a triangular shape * cut in sizes you would prefer.▪ Bake in a preheated 180°c oven for 35-40minutes.▪Remove from oven say Alhamdulillah and dust with icing sugar.
INFO & TIPS
▪You can use a homemade puff pastry I lack the arm muscle to keep it rolling so prefer to purchase.
▪If your not a fan of using essence then a lemon/orange peel can be brought to boiling point in half of the milk while mixing everything up with the other half of milk then combining all when the stovetop milk starts to boil.
▪Remember to remove and discard your lemon/orange peel when custard begins to slightly thicken.
▪When cutting through use a long sharp knife and wipe your knife clean after each cut.
▪Do not skip the 1 hour resting in the fridge step or your puff pastry will become to hard to manage when cutting and separating.
▪The meringue frosting rises better and has no cracks when rested in the fridge.
▪In picture B they weren't placed in the fridge and sadly the tops cracked and are flatter.
▪While picture A they were in the fridge as my tray was to small to accommodate all, they rose beautifully and without cracks.
