Cake1 cups granulated sugar1 cup vegetable oil3 eggs2 cups all-purpose flour2 teaspoons ground cinnamon1 and ½ teaspoon bicarb1 teaspoon vanilla½ teaspoon salt2 cups shredded carrots 1 /2 cup coarsely chopped walnuts or pecan or any desired nuts (optional)¼ cup of water (if necessary) Frosting :½ cup butter softened2 cups of powdered sugar 20ml of milk
Cake: Pre-heat the oven at 1801.Beat the eggs, sugar and oil together until smooth 2. Add bicarb, salt, cinnamon and vanilla mix well3. Add the flour and blend together4. now add the carrots and nuts 5.Add the water in slowly as needed and mix until at the correct consistency.Bake for 20 - 25 minutes or until dry Remove and allow to cool Frosting :Mix the butter and powdered sugar together until thick and no bumps, add the milk and combine well, add more milk or more powdered sugar as required for consistency. Ice cake and decorate as desired with nuts etc
