CREDITS
Original recipe from @pots_pans_and_pancakes - this is my veg version and I left out the sugar.
INGREDIENTS
1.5 cups self raising flour1 teaspoon salt½ teaspoon white pepper1 teaspoon origanum/Italian herbs½ cup mushroom ½ cup chopped peppers (red, yellow, green)1 cup grated cheese1 egg1 cup milk1 tablespoon tomato paste (or pasta sauce if handy)(½ teaspoon ground chillies for spice)
METHOD
1. Preheat oven to 180 degrees celsius. Spray 12 hole muffin tray or grease with oil2. Combine all ingredients - in 1 bowl! Donot over mix.3. Spoon mixture into prepared tray. Sprinkle with herbs on top and bake in middle rack for 10 minutes or until skewer comes clean.4. Leave it to rest and serve hot
INFO & TIPS
Substitute veg or add in spring onion, red onion, corn
Freezer suitable (but I haven't tried it yet)
Simple toddler friendly snack which they can prepare with you! :)
