INGREDIENTS
1 cups gram flour. ¼ cup pea flour 1 tablespoon cake flour 1 teaspoon baking powder2 medium Eggplants /purple shiny and blemish free Brinjol1 Tablespoon butter ghee (Clarified butter) Pinch freshly roasted crushed jeeru (cumin) and dhania (coriander) ¼ teaspoon baking soda 1 teaspoon Suhanas red chilli powder ¼ teaspoon whole jeeru (cumin)½ teaspoon garlic pasteSeasonings salt adjust accordingly. 1 large red onions grated squeese moisture out1 teaspoon freshly ground red chilli relish or1 cube green masala ¼ teaspoon tumeric for colour optional Drizzle of red chilli flakes Freshly chopped dhania (coriander)Shallots optionalWater - mixing batterOil - frying
METHOD
In a bowl add all dry ingredients, green masala,spices red onions, butter ghee (Clarified butter), garlic paste, seasoning and using water make a batter.
Optional- if using any variation like baby Spinache , jackfruit segments, lettuce or brinjol wheels, bananas, methie bhaji (Spinach), sweet potatoes, potatoe treats, whole mushroom,shrimp, chicken, broccoli, Cauliflower, gourd Choose one and add now if not just stick to the basic chopped onions, lettuce or Spinache as main.
Prepare Eggplants, chop into thin slices in rings/wheels shaped place in a bowl of cold water with pinch salt
Drain brinjol dab with kitchen towel and swirl with the Buttery prepared batter.
In a deep saucepan preheated oil, fry the Brinjol bhajias, turning it slowly around so that you get evenly cooked in golden brown bhajias/daljies in colour.
Use a slotted spoon to drain excess oil, a kitchen towel to absorb will be perfect.
These snacks can be served with the green dhania (coriander) sauce or preferred red chilli sauce. Serve these yummylicious treat serve hot or just before iftaar /Boeka
