My Family loves this for breakfast#Shaheema Khan
2 Large Eggs1 Cup Sugar or Brown Sugar1 Cup Oil2 Cinnamon powder2 Cups Flour, sifted1 teaspoon Baking Powder ½ teaspoon Bicarbonate of SodaPinch of salt1 teaspoon Vanilla Essence1 teaspoon Banana Essence¼ Cup Boiling water1/ 4 Cup Milk.. 2 Bananas, mashedZest of the orange... Juice of 1 Orange, (squeezed)
Step 1Mix the eggs, sugar beat well, add in the oil & essence.
Step 2Mix all dry ingredients in another bowl, add it too the wet mixture.
Step 3Add the orange zest & the juice of and orange into the batter mixture.Mix well....pour into the muffin cupshalfway filled. Bake @170 degrees for 20 minutes. Step 4Cool down on a rack with a towel cloth over it, keep the cakes moist for longer & fresh too.
INFO & TIPS
Can also make a large one bake @160 degrees for 40 minutes... Switch the stove off leave the cake in for another 5 - 8 minutes extra.
Store in a glass jar.. Keeps fresh for the nextday!
