INGREDIENTS
Lettuce Cucumber1 teaspoon butter1 can chickpea ½ teaspoon chilli powder ½ teaspoon dhania (coriander) jeerah powder Pinch turmeric powder Pinch salt1 red onion 2 tomatoes Dash lemon juice 3-4 fried sweetcorn samoosas 1 pomegranate Low fat yoghurt
METHOD
Layer lettuce and cucumber in a casserole.Lightly coat chickpeas in spices and salt and braise in butter for 2 minutes.Once cool, spread over the salad.Chop onion and tomatoes, add lemon juice, mix well and spoon over the chickpeas.Break samoosas in 3's and place over the tomatoes.Sprinkle pomegranate seeds and add dollops of yoghurt.
