RECIPE
Boiled sugar beans that has been cooked until soft but not mushy.1 onion chopped1 tomato choppedTomato pasteGinger garlic pasteOil and 1 tb butterCurry leavesSaltChilli powderGaram masalaDhunia powderJeeru (Cumin) powderRajah mild and spicy curry powderSliced GarlicCumin1 cinnamon stick.Green chillies to taste
In a large pot,heat oil and add onions, Jeeru (Cumin) and a cinnamon stick.Cook till soft adding butter once onions are golden brown.
Reduce heat and add all the dry spices. Gently fry the masalas being careful not to burn them,for about 30 seconds and mix well.
Next add tomatoes,tomato paste,curry leaves.
Add in cooked sugar beans with the stock it was boiled in. Add some salt and sugar to taste and mix well.
Drop teasponfuls of dumpling batter into the simmering curry, and allow to cook for 10 minutes. (Do not open pot) After 10 minutes the dumplings would be cooked and well risen. Serve curry hot and with roti.
For the dumplings:
About half to 1 cup FlourSoftened butter1 teaspoon baking powderDried oreganoCrushed garlicSalt and pepperHot water to form batter
In a bowl add flour and baking powder. Stir well. Add in softened butter and all the seasonings. Make a soft batter by adding enough water.
