Basmati rice-1.5 cups1 onionGlug Olive oil ½ teaspoon ground garlic paste1 tomato grated1 tablespoon tomato paste1 ½ teaspoon salt2 tablespoon chopped colored peppers¼ teaspoon turmeric powder
Chicken fillet strips - 1 kg
METHOD
Tomato rice- wash and soak 1.5 cups basmati rice for 10 minutes.Braise onion in olive oil and sauté.Stir in ground fresh garlic.Add in grated tomato, tomato paste, salt, chopped peppers, turmeric powder. Braise all for 1 minute or 2.Add in 1 ½ cups water, boil rapidly and add in rice and leave to cook as normal till fluffy.
Portuguese Chicken - marinate cubed chicken fillets in 2 tablespoon vinegar, 1 tablespoon salt, 1 teaspoon crushed dry chillies, 1 teaspoon black pepper, 1 tablespoon garlic, 3 tablespoon Portuguese peri peri spice powder ( mines is from the UK, but any will do ) - marinate for 30 minutes- heat few tablespoons olive oil and throw in marinated chicken cubes and steam on low.Serve with the tomato rice
