Marinate leg with the following ingredients:4 teaspoon red chilli powder 4 teaspoon saltblack pepper 3 teaspoon rough chillies 5 teaspoon texan steak spice3 teaspoon lemon and herb spice 3 teaspoon bbq spice3 teaspoon meat tenderiser 2 tablespoon steers bbq sauce2 tablespoon steers hot peri peri2 tablespoon steers burger relishMarinate and freeze or refrigerate overnight.When ready to cook ,remove from the freezer or refrigerator (if its in the freezer remove the night before so it can defrost). The next day in a wide pot heat 150g rama margerine, add the leg, slow cook till done ,this can take up to 6 hours or more.
Sauce:½ cup steers hot peri peri ½ cup steers burger relish ½ cup steers bbq½ cup all gold tomato sauce Qtr cup Worcester sauce2 teaspoon soya sauceHalf bunch green dhania (coriander) 5 whole green chillies 2 tablespoon texan steak spice1 tablespoon rough chillies
Garnish Rorbertsons crushed dry garlic Green dhania (coriander)
METHOD
Blend all the ingredients for the sauce. Throw some over leg and grill in the oven or bbq. Heat the remaining sauce throw over leg roast, garnish with crushed garlic and green dhania (coriander). serve hot with creamy vegetables
