3 large orange sweet potato cubed3 carrots cubed1 large onion chopped3 garlic cloves1cm piece gingerHalf teaspoon smoked paprikaHalf teaspoon cinnamon powder Half teaspoon turmeric 200ml boiled water1 veg stock cubeSalt to taste150 ml fresh cream2 tablespoon Butter
Melt butter. Add onion and fry until lightly browned. Add ginger garlic, Sweet potato and carrots. Mix well. Add cinnamon, paprika, and salt to taste. Cook for 5 minutes
Add water with stock. Bring to boil and once veg is soft, blend until smooth. Add half of the cream and mix well. Leave to simmer for 5 minutes.
Serve hot with croutons and dollop of cream.
