1. BaseWet ingredients 1 egg125g choice butter½ cup white sugar
Dry ingredients 1 ¾ teaspoon royal baking powder2 cups cake flour Pinch salt
Method of BaseBeat sugar, butter and eggs until light and fluffy, sugar must be desolved before adding dry ingredients. Sift all dry ingredients add to wet mixture and make the dough. Press into tart pan. Blind bake preheated oven 180 degrees bake 12-15 minutes until done.
2. Prepare the milk filling 3 ½ cups fresh milk 125g choice butter2 cinnamon stick
In a saucepan add the above fresh milk, pure butter, cinnamon stick and bring to boil uncoveredThen add the ffwg:-
1 cup white sugar6 Tablespoons corn flour (mazeina) 1 tablespoon custard powder1 Tablespoon flour 1 teaspoon vanilla essence4 large eggsUse a egg beater and beat whilst still hot. Sieve any lumpy mixtures of custard or corn flour. Kindly remove whole spices like cinnamon stick discard.
Once base baked, remove and allow it to cool completely before pouring in the custard. Sprinkle cinnamon. Refridgerate to chill, final decors of choc ball, white choc or flakes, drizzle cinnamon in artistic image once set.

Remove whole spices from the filling discard once cooked before pouring into the sweet pastry.
