INGREDIENTS
Needed-1x 20cm round tart pan/springform pan
Base-3 cups Bokomo granola½ cup runny honey1 teaspoon cinnamon powder¼ cup desiccated coconut2 tablespoon melted butter
Filling-1 cup plain double cream yoghurt2 teaspoon vanilla essence2 tablespoon sugar2 tablespoon honeyPinch cinnamon powder
Topping-3 crisp pink apples Bowl of cold waterPinch salt
METHOD
1. Preheat oven to 180ºC.2. Spray 'and Cook pan.3. Pulse the granola, cinnamon, honey, melted butter and coconut in a food processor to combine.4. Spoon into the pan. Then use the back of a spoon to press the mixture into pan and a halfway up the sides.5. Bake the base for 10 minutes. 6. It will be soft but will harden and crisp when cooled. 7. For the filling, mix the yoghurt, honey, sugar and cinnamon. Spoon onto tart base.8. Leave in fridge.9. To make the apple topping, cut the apple in half longwards.10. Then using apple corer, remove seeds from both halves.11. In a bowl of cold water, mix in a good pinch of salt. 102 Place apple half down flat and slice paper thin slices.13. Place slices in bowl if water till 6 halves are sliced.14. Place a handful of slices on a microwave plate.15. Place in microwave and cook for 30seconds, or until slices are pliable. 16. Lay 6-8 slices in a row, partially ontop of each other and roll into a rose.17. Place onto yoghurt continuing till its filled with apple roses.18. Place in fridge to chill.19. When ready to serve garnish with mint leaves.20. Cut into 8 slices. May serve with additional sweetened yoghurt.

Note: You may use any other fruit you wish. Assorted berries, mango, add on bloomed chia seeds etc.
