6 pineapples
3 carrots
3 teaspoon salt
3 tablespoon Methi (Fenugreek) masala
1 teaspoon aradh
2 teaspoon chili powder
1 ½ cups brown sugar
2 cups white vinegar
½ cup maizena (corn flour)
1 green pepper - cubed
1 red pepper- cubed
Vagaar:
¼ cup oil
10 curry leaves
2 cloves garlic
3-4 green chilies - slivered
2 tablespoon sesame seeds
2 tablespoon mustard seeds
Peel, wash and dry pineapples and carrots. Cut pineapples and carrots into cubes and mix in the salt. Leave to soak for about 3-4 hours. Strain and make sure to dry completely.
Add in your spices.
In a pot add in your sugar, vinegar and maizena (corn flour) and stir till thick. Add this to your pineapples and mix. Add in your peppers.
Lastly make your vagaar and add to pineapples and give it a good mix.
U can refrigerate when cool.
