INGREDIENTS
1 packet Kataifi125g whole pistachio125g whole almonds1 teaspoon ground cinnamon Pinch of ground cloves250g melted butterSyrup2 cups sugar1 ½ cups waterFew drops lemon juice2 cinnamon stick
METHOD
Start by preparing the syrup. Add all the ingredients for the syrup into a small pot and bring to the boil. Boil to make a sticky syrup not a thick syrup.Leave the syrup aside to cool.Prepare the filling.In a blender add the whole pistachio,whole almonds,cinnamon and cloves,pulse until the nuts are roughly chopped.Grease your silicone mould Take some kataifi and place in the bottom of the silicone mould.Press down lightly,do not compact the kataifi pastry!!Drizzle a little butter over Sprinkle the pistachio filling over Top with another layer of kataifiDrizzle more butter over.Bake in a preheated oven at 180 degrees untill the top is brown.Remove from the oven,as soon as you turn the kataifi out of the oven, ladle slowly with ¾ of the cold syrup over the hot kataifi,making sure each ladle is absorbed. Cover the pan with a dishtowel and set aside for 10 minutes. Ladle the rest of the syrup over the kataifi and wait until all the syrup is absorbed.Serve with vanilla ice cream
