I had 3 punnets of Broccoli and very fussy rabbits (and children) that wouldn't eat it.. So I decided to try making a broccoli soup.. With outstanding results! This soup is dreamy!
INGREDIENTS
Broccoli (3punnets)1 onion diced1 stick celery diced2 tablespoon cheddar cheese2 tablespoon gouda cheese2 tablespoon mozzarella cheese4 cups of water2 cubes of chicken stock1 cup of full cream milk½ cup fresh cream4 tablespoon butter1 teaspoon oreganoPepper to flavorSalt to flavor2 chillies (optional)
METHOD
Melt butter in a big heavy pot. Add onion and celery (chillies if using) and braise until translucent. Add broccoli, chicken stock, water, milk and bring to boil over low heat until broccoli is soft. Add oregano, salt and pepper to taste and cheese.
Mix well and blend in a food processor or use a stick blender to make it smooth. Return to heat for 2 minutes, turn off heat and soup is ready!
INFO & TIPS
Serve with a dollop of cream, grated cheddar and chopped cilantro.
