INGREDIENTS
1kg pitted dates
2 cups orange juice
¼ cup rose water
1 teaspoon Elachi (cardomom) powder
100g dried cranberries chopped
50g dried apple chopped
50g almond nibs
50g walnuts chopped
50g cashews chopped
¼ cup ground almonds
phyllo pastry
melted butter
ground pista (pistachio nuts) and dried rose petals for
sprinkling
METHOD
on a low heat simmer dates,juice,rose
water and Elachi (cardomom) until dates are soft
and mashed,remove from heat and all
low to cool a bit.
Add the rest of ingredients and
combine well.
With a piping bag nozzle mixture into
fingers on a tray with baking paper
and freeze(it wont harden but makes
it easier to handle)
cut phyllo sheets into squares,brush
with butter,place date finger and fold
into finger.
Brush with butter and bake @ 180
until lightly golden.
Sprinkle with ground pista (pistachio nuts) and dried
rose petals
*ideal for entrance hall @ weddings
pair with bombay crush*
INFO & TIPS
i prefer to soak dates in
orange juice overnight and in the
morning add elachi and rose water
before simmering.
And i use a plastic piping bag without
a nozzle,this way i can adjust the hole
so to suit the chopped nuts in the
mixture
