Ingredients 1:1 Kg tilapia fish fillet½ Teaspoons salt or to taste½ Teaspoons black pepper powder or to taste½ lime for juice Ingredients 2:1 Cups fresh coriander leaves (or cilantro)½ Cups water1 & ½ Tablespoons shredded unsweetened coconut1 & ½ Tablespoons roasted peanuts1 Teaspoons cumin seeds½ Teaspoons salt1 Tablespoons fresh ground ginger1 Large garlic clove1-2 Green chili peppers2 Limes for juice
In a platter sprinkle ingredients 1 over the fish coating both sides and set aside.Prepare a smooth green chutney in a blender with ingredients 2.Brush a baking tray with vegetable oil. Place the fish in the tray and marinade both side with the green chutney mixture. Let stand for 10-15 minutes.Preheat oven to 180 degrees C, bake the fish for 20-22 minutes or till fish is done.Serve with rice or grilled vegetables. Enjoy!
