Bismillah.
INGREDIENTS
2 cups grated carrots2 litres milk2 tablespoon SemolinaNestlé creamCondensed milkSugarElachi (cardomom) powderAlmond piecesGround almonds Dessicated coconut
METHOD
1. Finely grate 2 cups of carrots. Place in pressure cooker with 2 litres of milk and pressure cook for 30 minutes. ( Alternatively, cook on stove on medium heat for about 2 hours ).
2. Once done, use a stick blender and blend carrots. Then put back in pressure cooker for a further 15 minutes.
3. Then transfer to a pot, and on low heat keep mixing the carrots until the liquid dries up and you get a thick carrot mixture.
4. Place carrots one side. Then in a pot heat ½ cup ghee (Clarified butter). Add 2 tablespoon semolina and once semolina slightly browns add in your carrot mixture. Keep mixing.
5. Add in 1 teaspoon Elachi (cardomom) powder, 1 teaspoon dessicated coconut, 2 tablespoon ground almonds, 1 tablespoon whole almond pieces, ¼ of the big tin Nestlé cream, ½ tin condensed milk and ½ cup sugar. Keep mixing or else it will burn. Mix until ghee (Clarified butter) comes to the top and halwo is fairly dry. Garnish with cream. ENJOY😍
