Adapted this is a mild Pilau
(You May use Steak or Chicken)
Boil 1 and ½ cups Basmati or any Rice with 1 teaspoon salt once done Drain and keep aside for later Take little grated carrots add ghee (Clarified butter) and ¼ teaspoon sugar and braise till it nice and crunchy - keep some aside for Garnish) Take about 6 or more big Raisins or sultanas keep like 3 aside for Garnish Braise in the same ghee (Clarified butter) Remove and keep aside Now in a seperate pot on stove heat and add little ghee (Clarified butter) and or oil if you prefer 1 small sliced keep some aside for Garnish or grated onion Few curry leaves (optional) 2 cloves 1 small tuj (cinnamon stick) 2 Elachi (cardomom) pods 3 - 4 whole black pepper 3 cut up Green chillies 3 Whole sliced Garlic Few shreds, ginger Braise Add ½ kg Cut up mutton piecesLet the mutton braise with the whole spices and onion Add 1 teaspoon ginger garlic paste Pinch of Saffron Add 1 small chopped tomato 1 teaspoon Jeera powder ½ teaspoon dhania (coriander) powder And very little salt Let it braise add 2 cups water And cook till softADJUST the TASTE ADD Green chilli paste if you prefer a bit hot Add ½ teaspoon Garam masala Mix wellNow Add The Rice Toss some carrots and raisins inMix well add more water if looking dry, Add Chopped green dhania (coriander) mint Mix well Garnish Sprinkle the Top of the rice with some grated carrots and raisins or sultanas And Steam in oven at 180 * for +-15 minutes Serving suggestion Salad Dahi AcharEnjoy
