INGREDIENTS
Falafel
1 c chickpeas, soaked overnight2 tablespoon flour½ teaspoon ground garlic1/2 teaspoon ground ginger1 teaspoon green chillies1 teaspoon crushed cumin1 teaspoon lightly crushed coriander seeds3/4 teaspoon Caraway seeds1 teaspoon salt3/4 teaspoon baking powder4 tablespoon fresh coriander 4 tablespoon fresh parsley
Sesame seedsOil for frying
Hummus
1 can chickpeas¼ c tahini3 tablespoon lemon juice1/2 teaspoon salt1/4 teaspoon crushed black pepper1/2 teaspoon crushed cumin1 clove garlicPinch of chillie flakes2 tablespoon olive oil
Tahini dip
1/2 Cup tahini1/2 Cup yoghurt (I used doublecream)1/4 teaspoon crushed garlic2 tablespoon lemon juiceSalt to taste1/4 teaspoon crushed pepper 3-4 tablespoon water
METHOD
Falafel:
Place chickpeas in a food processor and process until fineAdd the remainder if the ingredients and process further until fineForm into balls and sprinkle with sesame seedsFry in hot oil until golden
Hummus
Blend together in a processor until smooth
Tahini dip
Blend togetherAdjust seasoning
INFO & TIPS
Served with roasted veg (red and yellow peppers and onion), pitas, chips and a raw veg salad (Cucumber, cherry tomatoes and sumac)
