Boil 3 cups basmati rice ½ way. Drain rinse and set aside. Fry 6 potatoes cut in 4s. Set aside. Braize 2 sliced onions in ghee (Clarified butter) with 2 teaspoon whole jeeru (cumin). Few cloves few peppercorns Elachi (cardomom) and tajj. Add in 1 sprig curry leaves and 2 slit chillies.
Marinate 1 kg chicken with 2 tablespoon sujees aliphor masala 1 teaspoon sujees green masala 1 teaspoon sujees kholvad masala 1 tablespoon purespice ginger garlic 1 teaspoon arad (Turmeric)2 teaspoon chilli powder 1 teaspoon dhana jeeru (cumin) 2 teaspoon salt 1 cup sour milk 2 cups liquidised tomatoes ½ cup tomato puree Saffron essence.Add to onions and cook 10 minutes.Put potatoes and cover with rice. Sprinkle ½ cup fried onions and dot with butter. Cover with foil and bake 45 minutes.Serve with dahy and salads and Papar
