1 packet penne pasta (boiled and kept aside) Prepare and marinate:3 portions chicken fillet cubed (about 500g)½ teaspoon salt¼ teaspoon tumeric powder1 teaspoon fine black pepper1 teaspoon ground green chilli 3 tablespoon lemon juice2 tablespoon of ginger & garlic
Creamy sauce:250ml fresh creamHalf a bottle of Nando's Mediterranean sauce (or to your spice level)¼ cup mayonaise½ teaspoon chilli powder2 tablespoon tomato paste2 liquidised tomatoes
1. In a large stir-fry pan: Heat 2 tablespoon olive oil. Then add:*1 onion finely chopped. And, fry until brown.*1 green pepper (julienne strips)*1 cup sweetcorn 2. Thereafter add the marinated chicken with sufficient water. Leave to cook, and make sure the water has dried up.In a seperate bowl, mix together creamy sauce ingredients 3. Thereafter add this mixture to the chicken, and cook until sauce becomes nice and thick.Once the gravy has thickened, add it to the pasta, and make sure that it has been mixed well.4. Serve in a casserole, and garnish with mixed herbs.
