INGREDIENTS
(Use olive oil for all the frying - can add little
butter for flavour. Do not overdo the salt tho as
there is a sauce.)
- Mashed potato (nice and soft and creamy)
- Sauteed or creamed spinach
- Sauteed carrot ribbons & baby marrow ribbons
- Sliced mushrooms (big brown ones are devine for
this) fried off in garlic butter
- Grilled halloumi cheese (optional)
Make a sauce with sundried tomato pest or red
pepper pesto (or any other pesto u prefer) heated
with little bit of fresh cream.
METHOD
Layer mash, then each veg then top with halloumi &
generously drizzle over sauce. Serve as is for
vegetarians or as side with grilled meats or
grilled chicken or fish & some flat pizza style
pitas. Toooo yum :)
