Another cup of brown sugar with a pinch of ginger and cinnamon not to be added to mixture - kept aside
Mix ¾ cup butter and 1cup brown sugar until creamy Add 1egg and mix Add ¼ cup golden syrup beat until fluffy 1tspn van ess. Beat. Then add 1 cup roughly chopped nuts. Normally I use pecans. Today I put cashews. ¼ cup coconut and mix. In a bowl add 2 tspns bicarb, 2tspns baking powder, 2tspns ginger, 2tspns cinnamon and a pinch of nutmeg. Sift into mixture. Add 1 cup flour to start getting a dough together. Then add ¼ cup flour at a time to get a sticky-ish dough. Don't use your machine to mix here. Shape into balls. Roll in brown sugar mixture and place apart on a try. Don't flatten. Bake at 160° for 10 minutes or until brown.Lift and loosen as soon as it comes out of the oven.
