INGREDIENTS
225g softened
225g castor sugar
225g self raising flour
1 teaspoon baking powder
1 teaspoon vanilla essence
4 eggs
1 tin passionfruit pulp
(strain juices and reserve pips)
topping:-
250ml fresh cream
castor to taste
METHOD
combine all the ingredients and beat
on a medium speed till pale abt 3-
4mins.
Fold in passionfruit juice.
Bake for +/- 15min @ 175deg
allow to cool...
Beat fresh cream with sugar till soft
peaks form then fold in reserved
passionfruit pips.dollop each cupcake
with cream
INFO & TIPS
sumtimes i strain the pulp and heat
the juice,when cakes come out the
oven pour over while still hot.for 2doz
cakes u'll need 2 tins pulp.
