(original recipe from 1994, amended by me in 2025)
INGREDIENTS
Cakes:125g butter1 and ¼ cups castor sugar4 small or 3 large eggs
2 and ¼ cups cake flour3 tablespoons maizena (corn flour)3 teaspoons baking powder
½ cup water¼ cup Granadilla pulp (Rhodes brand)
Syrup:2 cups icing sugar1 cup water1 tablespoon apricot jam, optional 1 tablespoon butter, cold
Also needed:Dessicated coconut Small batch of buttercream or whipped cream (recipes in profile)Granadilla Coulis, for decoration (recipe can be found under my Baked New York Cheesecake)
METHOD
Cream butter and sugar very well. Add eggs one at a time and beat well until light and fluffy.
Sift dry ingredients together then add to batter alternately with water.Finally, stir through the Granadilla.
Pour into cake tin/cupcake cavities and bake until golden. (170°c, well preheated)Cool completely
Syrup:Bring syrup to a boil. Cool slightly. Dip cakes in syrup then roll in coconut. Place into clean wrappers.Pipe a frill of sweetened whipped cream/buttercream on the top border and fill with a little Granadilla Coulis.
INFO & TIPS
Dipping in syrup and coconut is optional. You can just top with cream and the coulis (sauce). Delicious!
