INGREDIENTS
1kg fish, fileted amd sliced ( I used hake fillets, store bought)4 tablespoon flourSalt4 tablespoon cornflour1 egg 1 tablespoon oil2 to 3 tablespoon water1 teaspoon baking powder1/2 Cup oil for shallow frying
METHOD
Rinse and pat dry fishLightly dust with flour. Shake and remove access then season with salt (I added in paprika as well to season)Sift remaining flour and cornflour together into a bowl and make a well in the centreWhisk egg until frothy then add in oil and whisk againAdd this to the flour incorporating it well and making sure there are no lumpsGradually add water amd mix to a light creamy consistency (I added a drop.of yellow food coloring here but that's totally optional)Lastly whisk in baking powderDip fish in batter and fry in hot oil until done (1 to 2 minutes per side depending on thickness of fish)Remove and place in an oven tray at 160until ready to serve (this should be as soon as possible)
INFO & TIPS
After frying I sprinkled over more salt and red chillies
Served with chips and lemon wedges
