INGREDIENTS
125g butter
500ml cake flour
pinch of salt
250ml castor sugar
5ml bicarb
250ml water
125ml plain yoghurt
125ml oil
125ml cocoa
2 xl eggs
5ml peppermint essence
METHOD
Sift flour, bicarb, salt & sugar together. Heat
water, oil, butter & cocoa together in microwave
or stovetop. Cool slightly. Stir into dry
ingredients. Add peppermint essence.
Beat eggs & buttermilk together & add to batter.
Pour into greased ring or square pan. Bake @
180*C for 25-30 minutes. Leave to cool, then cover
with ganache or icing of choice.
